Today I set the alarm for 3 hours before I had to be at work. This gave plenty of time for a long shower and for fixing breakfast & lunch.
I purchased some lean pork cutlets and cooked them in a skillet with just a tiny bit of olive oil and some garlic powder/parsley seasoning. While those were cooking, I brought out the salad veggies and began to prep... so I could make one salad for lunch and one salad for dinner. I was planning to eat one of the pork cutlets for breakfast, too. Hubby awoke during this time and cracked an egg into a bowl. He added some milk and then got mad when he realized he wanted a fried egg. No problem. I had veggies out, so I offered to eat the cracked egg so he could make a different egg. I added spinach, bean sprouts, scallion, tomato and a bit of medium cheddar which I shredded myself. It was yummy and totally unexpected.
So for lunch, I took one of the pork cutlets and one salad. I used a bit of Kraft ranch dressing (not the best choice, I know, but I used a lot less than I used to and I didn't include the 2 handfuls of Garlic Butter Croutons from before either) with only 2 carbs per serving.
Caught up with sis on the phone and reported my progress (and promised to work harder at keeping this thing up-to-date).
Dinner, well, was just the salad and maybe 4oz. of the leftover beef I cooked in the crock pot. I wasn't hungry enough to try to eat the pork cutlet.
I might be hallucinating, but my clothing actually felt bigger on me today. One thing I'm not hallucinating about is that my abdomen feels softer than usual.
Hubby has agreed to go to the Y with me tomorrow. First workout, here I come!

Way to go with the salads!!! I love how much salad I can eat without feeling guilty. I now make my own dressing b/c I found it hard to find ones without sugar. Recipe:
ReplyDelete-olive oil
-vinegar (I switch it up between balsamic and white wine vinegars)
-salt & pepper
-a little dijon mustard (emusifier)
-herbs in the fridge (taragon, basil, thyme - whatever)
i put it all in a shaker thing and it lasts a long time! :)
