Today was an unusual Monday in that I was scheduled to work, and that it was an earlier shift than usual. There's been construction on the street I take to work. I was up much earlier than I'd like. Fixed two fried eggs for breakfast. While they were cooking, I made lunch. I chopped up a tomato and a chicken breast and put them into a Tupperware bowl with Balsamic vinegar. I brought the last bit of raw cauliflower, too. Yum!
As I was leaving work, one of the gals complimented me and said my face looked thinner. Someone's noticing! :)
When I got home, there were some new sports bras in my mailbox. (If you don't already know, my sister ROCKS! She not only knows exactly what I need... she seeks it out and even gets it for me!) I love the Enell Lite. I wore it today to work out, and I can't wait to wear it to Zumba tomorrow and see what it's like.
I was worried about meeting with Kimberly after working the extended shift, but it went great. To change things up, she had me do the 2nd set of each machine really fast. It did help change things up a little... and it got us done much quicker. It seemed like I did some of the other sets faster, too. So then we were off to try some cardio machines. The elliptical is going to take more practice (and maybe another introduction when I haven't spent the entire day on my feet and just worked out). I did like the step glider (it was kind of like ice-skating) once I got used to the motion. My left knee was pretty fatigued after that.
And instead of going home, I went to the grocery store. I got chicken breasts, apples, an avocado, a lime, mushrooms, zucchini, shallots, broccoli, corn, and tomatoes. I grabbed just a few pine nuts and a bagful of barley at the bulk area. Now that I'm cooking lots of meals, I'm going to look for some new recipes to play with.
At home, I prepped all 5 pounds of chicken -- two breasts for the stir-fry and then the rest is in a Ziplock bag marinating. Added zucchini, broccoli, mushrooms, bean sprouts, and a shallot to the chicken on the stove. It was great, and I have half left over for tomorrow.
