Had the last of my pork chops today for breakfast & lunch. Both meals were accompanied by the zucchini/mushroom/leek medley I made. Still have some of the veggie dish leftover. I'll take it to work for lunch tomorrow.
Dinner @ Dad's was a very nice plank of salmon with steamed broccoli & zucchini plus a tomato/spinach salad with fresh basil, hearts of palm, mushrooms, fresh mozzarella, and balsamic vinegar. Balsamic might be my new best friend. Tastes great and doesn't pack the 70+ calories that one tablespoon of Kraft Ranch dressing has.
We've got a few things in the fridge to fix from our shopping trip last night. Tomorrow, Chris will grill the large pack of chicken breasts and then Monday I think I'll put the beef in the slow cooker.
